Just lost out again in a bidding war! What's going on?

I can't believe it—I just got outbid again! I offered $300 over asking, and someone else came in with $500 over. How is that even possible? This competition is insane! Is everyone really paying so much over asking? I'm feeling totally defeated here. Any tips on how to compete?
