How to handle surprise charges from movers in toronto like a pro

Just had a rough experience with a crew in Parkdale. My flat-rate quote suddenly doubled when they took way longer than promised. I thought I was covered, but apparently not! Anyone else deal with unexpected costs after a move in Toronto? What did you do?
