Surprise moving costs in toronto why do they add fees after booking

I just got hit with an extra $300 charge from my movers after they'd already started the job! I'm moving from a house in East York next week and I'm worried about what else I might be blindsided by. How can I avoid these surprise fees when dealing with Toronto moving companies?
