Why are one-bedrooms so competitive? Bidding strategies needed!

I’m really feeling the pressure in this rental market! Just lost out on a great one-bedroom because my offer wasn’t high enough. How do you even know how much to bid? Should I go all out or play it smart? It's so frustrating trying to navigate these sealed bids!
