Why is renting in Toronto such a hassle? Bidding wars galore!

I'm feeling totally overwhelmed by these rental bidding wars in Toronto. I keep losing out on apartments to higher offers, and I have no clue how much to bid! Is there any strategy to this madness, or are we just at the mercy of the landlords and their sealed bids?
