Why is renting in Toronto such a nightmare? Bidding wars everywhere!

I've been caught in this endless loop of rental bidding wars. Just yesterday, I lost a great apartment to a higher offer and feel completely frustrated. How can I even know how much to bid if landlords keep accepting inflated offers? It's such a competitive mess out there!
